The grapes are harvested by hand in the fall and fermented for a short period of time before the addition of 100% neutral grape spirit alcohol. This step stops fermentation, preserves the wine's natural grape sugars, and gives it its unique richness. Aged Tawnies spend many years aging in oak casks - the age on the bottle indicates an average age where older lots lend complexity and depth and younger wines offer vibrant fresh fruit flavors. The extra aging on the 30 year wines lends a long, mellow finish and a very special, rare experience. Serve lightly chilled in warm weather for a divine dessert in a glass. Pairing suggestions: crème brulée, milk chocolate or fine creamy cheese.
