Oxley Dry Gin is a classic English Dry Gin that is produced in a unique way. Rather than the normal heat-based distillation process employed by virtually all other distilleries, Oxley is made using cold distillation. In a nutshell, the raw spirit is placed in a vacuum chamber and the pressure is lowered. Liquids "boil" at a lower temperature when the atmospheric pressure is reduced, so by using the vacuum chamber, Oxley is able to boil or distill the spirit without the use of heat. The result is a clean fresh tasting gin that does not have the harshness often found in gins created using the traditional heat-based distillation process.
